Ltd Company Accounts?

I have a Ltd company, which I set up in January but has been dormant. I will be going live July 1st, but my distributors won't begin paying out until 3 months following the first sales. I'm confused how this would work. When do I log that a sale has been made? When it's paid, or when it's ordered? Confused...
